What makes a real wood-fired pizza different, how the oven actually works, and where to eat one in the CBD — written by the team at Noah on Loop Street.

"Wood-fired" gets used loosely on Cape Town menus. Sometimes it means a real wood-burning oven; sometimes it means a gas-fired oven with a few logs for show. The difference shows up in the crust — and once you've eaten the real thing, you stop being willing to settle.

What "wood-fired" actually means

A true wood-fired pizza oven burns hardwood logs — usually oak, olive or fruitwood — at temperatures between 380°C and 480°C. At those temperatures a pizza cooks in 60 to 90 seconds. The base chars in patches, the crust puffs up with big airy bubbles (Neapolitans call this leoparding), and the cheese melts without going greasy. Gas and electric ovens top out around 280°C, which is why their crusts come out paler, denser and drier.

The dough makes the pizza

The other half of a good wood-fired pizza is the dough. The best versions use a long, cold ferment — typically 48 to 72 hours in the fridge — which gives the crust real flavour and a lighter, more digestible texture. Cheap pizza dough is mixed and used the same day; you can taste the difference immediately.

San Marzano, fior di latte and a few good rules

The classic Neapolitan trio is simple: San Marzano tomatoes from Italy, fior di latte mozzarella (cow's milk, fresh), and basil. That's it. The trick is restraint — too much sauce drowns the crust, too much cheese turns the centre soupy. A good wood-fired pizza looks under-topped to most people the first time they see one. That's intentional.

Beyond the Margherita

Once you've got the base right, the toppings can move. How to spot a real wood-fired pizza

A few quick tells: the crust should have dark blistered spots, not uniform colouring. The centre should be slightly soft — a proper Neapolitan is eaten with a knife and fork in the middle and folded by hand at the edges. The cheese should still have the white pools of fior di latte visible, not melted into a uniform yellow blanket. And the whole thing should arrive at your table within five minutes of ordering — wood-fired pizzas are fast.
